Dear Families,
Today we made delicious pumpkin mini-muffins during free choice time and the children ate them during snack! The delicious recipe is from one of our TTHF parents.
1 2/3 c. flour
1 c. sugar
1 T. pumpkin pie spice
1 t. baking soda
1/4 t. salt
1/4 t. baking powder
2 eggs
1 c. canned pumpkin
1/2 c. melted butter
1 c. chocolate chips
Stir all dry ingredients together in one bowl, whisk
butter, pumpkin,
and eggs in separate bowl. Fold wet ingredients into dry
mixture, and
then stir in chocolate chips. Fill muffin tins 2/3 full.
Bake at 350
degrees for about 20 minutes – or about 13 minutes for mini muffins, until set and starting to
brown.
